Program: "Mushrooms Eat Our Garbage"
With an urgent need to nourish a growing population while mitigating environmental challenges and climate change, fungi have an important role to play. Edible saprotrophs are alternative proteins that can be grown on wastes and mycorrhizae are vital players in the transition to sustainable agriculture. This talk will highlight a successful mushroom food security project in South Africa through DIY Fungi, a local student effort to grow mushrooms for school dining services on school food wastes, and research done at UC Riverside into arbuscular mycorrhizae and agricultural intensification.
